Ingredients

  • One can of chickpeas, drained
  • 10 baby carrots, sliced
  • 2 cups of baby spinach
  • 2 tbsp of olive oil
  • 1 tbsp of smoked paprika
  • 1 tsp of cumin
  • Salt, black pepper, smoked paprika, cumin

Directions

In a pan, add two tablespoons of olive oil.

Add the sliced carrots and chickpeas. Let it cook until the carrots are soft for about 10 min.

Add the salt, black, smoked paprika, black pepper and cumin.

Let it cook for two additional minutes.

Add spinach and cook it for an additional minute.

Serve with rice and warm pita bread.
