There are some days when I do not hesitate to take shortcuts when it comes to cooking for my family. Cooking every day can be exhausting so anytime I get a chance to keep it quick, you can best believe, I will!

This recipe has a lot of my favorite ingredients. I love Aladdin Flatbread, especially with hummus or Sweet Pea Stew. It's a pretty affordable bread, soft and tasty. It also comes in different flavors such as Garden Vegetables, Garlic, or Plain, and I love all of them. This recipe also calls for roasted red pepper and banana peppers which I love on everything. Plus, those ingredients come already in jars straight from the grocery store, so yay for me!

If you can't find flatbread at your grocery store, you can switch with naan or even tortilla bread. The world is yours!

The best thing about this recipe is that it's easy to make, has minimum prep, no dishes, and is highly customizable just like my croissants for dinner! Honestly, I make this recipe with whatever I have in my fridge at the moment.

This time I used leftover chicken rotisserie chicken as my main ingredient, and added some sliced red onions, banana peppers, and roasted red peppers. I then added some Colby jack cheese which is what I had at the moment. I like to spice it up with crushed red peppers and finish with a drizzle of olive oil. You can skip the olive oil and replace it with a ranch and barbecue drizzle, that works too. 

The recipe ingredient is for one flatbread pizza which is enough for one adult. Sometimes my kids can finish one whole pizza bread on their own, sometimes they can share one, it depends on their appetite. Feel free to adjust the recipe to your family's needs.

This quick recipe is perfect for a quick meal or a laid-back dinner. You can customize this recipe with pretty much anything you find in your fridge. 

Ingredients

  • 1 Flatbread (or Naan)
  • 1/4 cup shredded rotisserie chicken
  • 3 red onions slices
  • 5 slices of banana pepper rings
  • 1/4 of roasted red pepper, cut in pieces
  • 1/4 cup of shredded cheese
  • crushed red pepper, salt and pepper
  • Drizzle of olive oil, ranch or barbeque

Instructions

On the flatbread add the chicken, onions, banana pepper rings and roasted red bell pepper. Season your added ingredients with crushed red pepper, salt, and pepper. 

Drizzle some olive oil and finish with the cheese. Broil in the oven on High for 3 minutes or until the cheese has melted and the edges are golden brown.

If you wish to add Ranch, Bbq, or both, you can do so after taking the flatbread pizza out of the oven.
